Columbia Bids Adieu to Beloved Bartender Grant McCloskey as He Moves to Philadelphia

COLUMBIA: A Farewell to an Iconic Bartender

Columbia has been buzzing with the news that Grant McCloskey, a beloved bartender who has been a vital part of the local cocktail scene for nearly eight years, is packing his bags and heading to Philadelphia. On September 6, he made the announcement through social media, sending waves of nostalgia and good wishes from loyal customers and fellow bartenders alike.

A Journey Through Columbia’s Cocktail Renaissance

McCloskey’s journey began back in 2016 at Cafe Strudel in West Columbia, where he initially dipped his toes into the world of mixology. This adventure soon took him to Austin, Texas, but the allure of Columbia called him back to take the helm as the bar manager at The Aristocrat. This period marked a wonderful twist in his career as Columbia’s cocktail culture blossomed during this time. Notable names like David Adedokun and Jake Smith were also paving the way for new ideas and fresh takes on drinks.

Making Waves at Ratio

His most significant contribution came when he joined forces with chef-owner Javier Uriarte to open Ratio in late 2020. Despite the heavy clouds cast by the COVID-19 pandemic over the dining scene, Ratio quickly gained a cult following in northeast Columbia. McCloskey’s knack for curating an enticing drink menu paired beautifully with Uriarte’s delicious Peruvian small plates.

“He definitely opened my eyes to trying new drinks,” Uriarte remarked, emphasizing that McCloskey’s talent extended beyond bartending – he was genuinely invested in perfecting the art of craft cocktails.

A New Chapter at The Hollow

In March of this year, McCloskey transitioned to The Hollow, an upscale eatery specializing in wild game, situated in the Vista. There, he was able to utilize his skills to set up a distinct cocktail program, guiding new staff and ensuring that quality remained the cornerstone of every drink served.

A Bittersweet Goodbye

McCloskey expressed mixed feelings about his departure, particularly as Columbia’s traditional bars and restaurants face challenges due to rising operational costs. “It’s been such a cool opportunity to be a part of the cocktail scene in Columbia,” he shared, reminiscing about the exciting growth within the community, even amidst challenges.

His commitment to the beverage world didn’t stop at making cocktails. McCloskey has been a familiar face at countless community events and has taken part in competitions, lending his expertise and flair to establish Columbia as a thriving hub for cocktail enthusiasts.

The Impact on Columbia’s Dining Scene

His boss at The Hollow, Chris Fitz, reflected on McCloskey’s influence within the community, calling him the “glue” that connects the cocktail scene’s many players. Fitz emphasized how integral McCloskey has been in uplifting Columbia’s bars and restaurants, driving many toward higher standards of craftsmanship in mixology.

As McCloskey prepares for his move in early October, he plans to continue serving behind the bar at The Hollow for the time being, ensuring that his transition is smooth and that the quality he’s known for remains intact. Columbia is set to feel the impact of his departure in more ways than one, but McCloskey is excited for the opportunities that await him in Philadelphia, eager to challenge himself and push his craft further.
