Exciting New Outback Steakhouse Opens in Lexington

Lexington, you’re in for a treat! Yesterday marked the grand opening of the eagerly anticipated Outback Steakhouse right in the heart of town. The restaurant is located at 5595 Sunset Blvd, taking over the former O’Charley’s space that has been vacant since the summer of 2023. Can you believe it took 24 hours of travel to get an Aussie steak before now? But now, all we need is a short trip to enjoy some authentic Australian cuisine!

The Journey to Opening Day

The journey to this opening day has not been a short one. According to the proud proprietor, Nikki Shiggs, it has been a dream to bring an Outback to Lexington for almost a decade! “We’ve been wanting to open here for about 10 years,” she shared. “And now with the O’Charley’s location, we found the perfect opportunity. Our goal is to be the happening spot here in Lexington.”

And from what we saw, it looks like they’re off to an incredible start. Even at 9 p.m. on opening day, people were still streaming in, eager to feast on the signature dishes that Outback is known for. “The community response has been fantastic,” Shiggs said, with enthusiasm bubbling in her voice. “We’ve had people ready to knock down the doors, all in the parking lot every single day!” It seems the excitement has been building up, and we can understand why!

A Menu Full of Delights

If you’re new to Outback, you’re in for a treat! Known for its Australian-themed menu, you’ll find fan favorites like The Bloomin’ Onion served with a delightful signature bloom sauce, juicy sirloin steak, Aussie cheese fries topped with bacon and homemade ranch, and the mouth-watering Alice Springs chicken featuring sautéed mushrooms, bacon, cheese, and honey mustard. If you haven’t tried these goodies yet, this is your chance to dive into a delicious experience right here in Lexington!

Thanks to the Team

Shiggs was quick to express her gratitude for everyone who helped make this happen. From the training crew to upper management, she acknowledged the crucial role each person played in bringing the new restaurant to life. But what stood out the most in her eyes was her hardworking staff. “I want to thank my staff because without them, I’m nothing – they’re more important than me,” she said with a smile. What a wonderful sentiment!
