Columbia’s Publick House: A 30-Year Tradition Gets a Fresh Makeover

Hey there, Columbia! If you haven’t checked out Publick House yet, it’s high time you took a stroll down Devine Street to discover what this 30-year-old neighborhood gem has to offer. Recently renovated and infused with a bunch of new, exciting changes, Publick House is ready to welcome both longtime fans and newcomers alike.

Something Special in Every Bite

One of the shining stars on the revamped menu is the homemade corned beef, a labor of love crafted by owner and chef Drew Kalagher. Now here’s a fun fact: Drew proudly claims to be the only chef in South Carolina regularly whipping up this beloved dish in house. He goes through the entire painstaking process of brining and boiling every week, which involves seasoning briskets with a delightful melange of spices including brown sugar, cinnamon, and juniper berries. You can almost taste the “meat butter” he describes when you sink your teeth into their famous Reuben sandwich.

“I come from an Irish family, and my great-grandmother was a fantastic cook. I think I’ve come pretty close to replicating her recipes,” Kalagher shares with a warm smile. The corned beef is just one of many changes that have come to life at Publick House since its reopening earlier this year.

A Fresh Look and Approach

The recent renovations weren’t just skin-deep. Inside, you’ll find an inviting atmosphere with bright new paint, updated seating, and a mural that instantly lifts the spirit of the bar. The space has undergone transformations not only in decorations but also in what’s on the menu.

Gone are the days where many folks thought of Publick House solely as a drinking spot. With a focus on food quality, the menu has been curated to include delectable weekly specials. There’s the juicy Wednesday prime rib and exciting Monday burger nights that are paired with pint specials. Not to mention, the array of draft beers flowing from a shiny new cooler featuring 18 taps, each meticulously maintained for optimal taste. Talk about a beer lover’s paradise!

Creating Community Connections

The goal here is clear. Kalagher, along with consultant Matt Catchpole, has implemented changes to make Publick House a homey gathering place for families and friends, not just for a night out with drinks. They aim to retain their loyal clientele while drawing in new crowds by enhancing their offerings.

Catchpole shared, “Getting women and families back was a big thing for us. We wanted to broaden our audience and channel the spirit of what Publick House is all about.” In doing so, they’ve decided to bring lunch back and introduce fresh craft cocktails to keep the vibe lively and inviting.

Looking Ahead

There’s more on the horizon as well! In addition to the delicious food and revamped space, they have plans to expand by utilizing an adjacent bar space. Future plans include opening that area as a cocktail bar on select nights, signaling an even more exciting period for Publick House going forward.

Classic Favorites Remain

And for those who worry about losing the beloved favorites, worry not! The legendary chicken wings and raw fries—often hailed as some of the best in Columbia—remain unchanged. Kalagher has only tinkered with a few sauces over the years, ensuring that the essence of Publick House endures.

As Publick House enters its next chapter, there’s an air of optimism and growth that surrounds this beloved Columbia establishment. Whether you’re a local or just visiting, the warm vibe, delectable food, and refreshing drinks beckon you to experience what makes Publick House a beloved institution!
